Lean Harvest Chicken Bowl


1lb butternut squash spirals

10oz Kale

1 lb boneless skinless chicken breasts

1 1/2 TBSP Magic Poultry Magic Seasoning

Coconut Oil Spray

1 medium honey crisp apple julienned

1/2 tsp ground thyme

1tsp garlic powder

1 cup chicken broth

Salt and pepper to taste

Directions: Cube chicken and toss in a bowl with magic poultry seasoning. In a large pan, spray with coconut oil spray and brown chicken. Once browned and cooked through, separate into 4oz portions for meal prep purposes. In the same large pan, spray with coconut oil and add in the butternut squash spirals. Cook for 2mins and add in 1/2cup of chicken broth. Stir occasionally. Next, add in half of the bag of kale and stir occasionally. Cook for 2mins, then add the remaining 1/2 cup of chicken broth. Add in the garlic powder, thyme, salt and pepper, and stir until mixed. Cook for about 5 mins until butternut squash is al dente. Once finished, separate portions into the meal prep containers and toss with julienned apple slices. Cover and reheat within 3 days! Enjoy!
