Healthy Roasted Vegetables

Growing up, the vegetables we ate were mainly steamed, sautéed, or grilled. A few years ago, I discovered an amazing new way to cook vegetables: roasting them in the oven! Why had I never thought of this?! My favorite vegetable to eat roasted is either broccoli or Brussels sprouts. Try the recipe below for Healthy Roasted Vegetables.


Ingredients:


•Vegetables of your choice (Broccoli, cauliflower, Brussels sprouts, carrots, asparagus, yellow squash, zucchini, onion)

•Avocado Oil Spray

•Sea salt to taste

•Garlic powder - 1 TBSP

•Onion powder - 1 TBSP

•Pepper to taste

•Paprika - 1 TBSP


Directions:


•Preheat oven to 400 degrees.

•Wash and trim vegetables (if using Brussels sprout, cut in half)

•Place vegetables in mixing bowl and add in seasonings

•Spray vegetables with avocado oil spray/olive oil and spread in baking sheet

•Bake at 400 degrees for 15mins
