Healthy Jamaican Style Cabbage


This is a healthy version of Jamaican style cabbage. It is usually made with butter and oil and in this recipe, only 2 TBSP of oil is used.



Ingredients:

2 TBSP olive oil

1 cabbage shredded

1 1/2 cups of frozen peas and carrots mix

1/2 onion diced

1 TBSP minced garlic

1 cup chicken broth

1/2 tsp ground allspice

1 1/2 tsp dried thyme

1/2 tsp curry powder

1 scotch bonnet pepper


Directions:

In a large, deep, non stick skillet heat 2 TBSP olive oil over medium to high heat. Add in garlic and onion and cook for 1-2 mins until onion is translucent. Then, add in cabbage and let cook for about 5 mins, only stirring a couple of times. Then, add in the frozen peas and carrots and chicken broth and cook for 5 mins. Add in spices and whole scotch bonnet pepper. Cook for 5 mins then remove the pepper. Season with salt and pepper and cook for a couple more mins until cabbage is tender. Enjoy!
