*Healthier* Parmesan & Yogurt Cream Sauce with Zoodles
This is a lighter version of an Alfredo sauce with a little bit of added protein from the greek yogurt. This would go great with grilled chicken or steak!
1/2 cup heavy cream
1/2 cup plain no fat Greek yogurt
1/2 cup Parmesan
10-12oz zucchini noodles
1/2 medium shallot, diced
1 TBSP minced garlic
In a large pan, spray with Pam and sauté shallot and garlic for 2 mins on medium to high heat. Add zucchini noodles and cook for 5 mins. Remove from pan and set aside. In same pan, pour in heavy cream and cook for 1 min. Add in Greek yogurt and stir until combined. Add in Parmesan cheese and cook until mixed in. Add in noodles and stir until mixed in. Remove from heat and serve.
