Creamy Spinach Quiche Cups

So airy and delicious, you might eat them all in one sitting! Made with phyllo dough cups, they are so easy and quick to make!


1 pack of Athens Phyllo cup

2 eggs beaten

Salt and Pepper

Baby Spinach


Whipped Cream Cheese


Preheat oven to 350 degrees. On a non stick baking sheet, remove phyllo cups from packaging and place on baking sheet. Using a butter knife, spread a thin layer of the whipped cream cheese on the bottom of each phyllo cup. Then, tear the baby spinach leaves in half and place 1 spinach leaf in each cup, on top of the cream cheese. In a small bowl, whisk two eggs and season with salt and pepper. Using a spoon, very carefully spoon a couple of spoonfulls of egg mixture into each phyllo cup. Lastly, sprinkle a little bit of Parmesan cheese on top of each phyllo cup and bake for 15mins. Enjoy in one or two bites! 😁
