Cilantro Lime Shrimp Bowl
This bowl is so versatile and you can add or take away ingredients. To make this low carb, you can use cauliflower rice or broccoli rice.
1 1/2 tsp chili powder
1/2 tsp coriander
1 tsp onion powder
1 tsp cumin
1 tsp garlic powder
1/2 tsp salt
A couple dashes of red chili flakes
1/2 small shallot chopped
1 medium-large zucchini cut in half moons
1/2 of an avocado
Juice of 1 lime
30 medium-large uncooked, peeled, shrimp
Brown rice/cauliflower rice/ broccoli rice
In a large skillet, spray with Pam and place chopped shallot in pan and cook for 1 min. Add in diced zucchini and let sit in pan for a couple of minutes before stirring (this helps it brown a bit). Cook for 5 mins or until tender. Remove from pan and place on a separate plate to rest. In a medium bowl, place shrimp, seasonings, and juice of lime in and toss until shrimp are coated. Spray the same pan used to cook zucchini with Pam and add shrimp. Cook for 5 mins or until done. For a quick weeknight meal, opt for the boil in the bag brown rice and cook according to package directions. Add shrimp, rice, spinach, zucchini, salsa, and avocado to your bowl. Then add a squeeze of lime juice and lots of fresh cilantro and enjoy!
