Cheesy Veggie Quiche

Perfect for weekend mornings! Or, you could cut portions and reheat for on the go weekday mornings at work! This cheesy, veggie quiche is the perfect combination of healthy balance. Packed with protein and nutrients to get your day started!


1/2 cup heavy cream

1/2 cup chicken broth

6 eggs

2 TBSP thyme

1 cup part skim mozzarella shredded

salt and pepper

1/4 cup diced shallot

2 TBSP chopped garlic

1/2 cup of broccoli sliced lengthwise

1/2 cup of cherry tomatoes sliced lengthwise

Phyllo dough sheets (10)


Preheat oven to 375 degrees. In a small pan, add 2 TBSP olive oil and heat and add diced shallots and garlic. Cook for 2 mins, stirring constantly. After 2 mins, add diced broccoli and cook for 1 min. Remove from heat and cool. In a round pan or dish, spray pan with non-stick spray. Place thawed phyllo dough around edges and bottom of pan and spray with nonstick spray. Make sure that the phyllo dough cover the bottom and sides of the pan. In a large mixing bowl, add the eggs, thyme, salt and pepper, heavy cream and chicken broth. Whisk until combined. When shallot,garlic, and broccoli mixture is cooled, add shallots and garlic to egg mixture. Add cheese to egg mixture and stir. Once combined, pour egg mixture over phyllo dough. Place broccoli and tomatoes on top of egg mixture. Bake in oven for 30-35 mins. Enjoy as you please! You can add scallions before serving!
